TRADITIONAL AZERBAIJANI TOMATO OMELET

Ingredients

  • 3 eggs mix in a bowl for omelet
  • 6 or 7 medium sized tomatoes
  • 1 tsp non-salted butter
  • Salt and pepper to taste

Cooking instructions:

  • Take frying pan, add butter, remove the skin of tomatoes, chop them and add to the pan.
  • Cook the tomatoes until done, they should be mushy.
  • Add egg omelet on top and cook until egg is well done.
